BOLINHOS DE BACALHAU

Ingredients:

  • 1/2 kg of desalted cod

  • 1/2 kg of cooked potatoes

  • 3 olive oil tablespoons

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 beaten eggs

  • Parsley

  • Nutmeg 

  • Pepper

  • Salt

  • Frying oil

Desalting the Cod:

Before starting with the final preparation of the "Bolinhos de Bacalhau", we have to leave the cod in water for 24 hours, this way we eliminate the excess salt that the fish has.

We suggest changing the water about 4 to 5 times within 24 hours.

Preparation of the Bolinhos de Bacalhau:

In a pot we cook the potato without the peel, until it is soft, once the potato is cooked, crush it until we get a homogeneous puree.

In a frying pan, place the oil, the chopped onion and the garlic, stirring until you get a golden color. Once it's ready, add the previously cooked and minced cod, and mix until it has a paste texture.

When we have the cold cod preparation, we add the mashed potatoes, the nutmeg, the parsley, the salt, the pepper and the two previously beaten eggs, mix well until achieving a homogeneous dough.

In a frying pan, heat the oil. With the help of a spoon we make small rolls of the cod dough and fry them until they are super golden brown.

Remove from the oil and let them rest on absorbent paper.

Ready to eat!
